Ditch the Mayo and Try This Heart-Healthy Greek Potato Salad
This fresh Mediterranean take on a classic Summer side dish uses vitamin-rich potatoes with heart-healthy olive oil and tangy red wine vinegar instead of gut-blasting mayonnaise.
Simple to prepare with wholesome ingredients, this filling, flavorful side dish works for parties, BBQs, or family gatherings. It's also gluten-free, vegan, and loaded with fiber. Knowing that a Mediterranean diet is the best for weight loss, we're probably going to be making batches of this!
Greek Potato Salad
INGREDIENTS
- 3.5 lbs. Yukon potatoes
- 1/2 cup salt
- 3/4 cup olive oil
- 3 oz. red wine vinegar
- 1 bunch sliced green onions
- 1/2 cup chopped parsley
- 1 tbsp. kosher salt
- 1 tbsp. black pepper
INSTRUCTIONS
Put potatoes in a large pot of water with the 1/2 cup salt and bring to a boil. Once the potatoes come to a boil, turn down the heat to a medium simmer and cook until just tender, 25-30 minutes. Drain and let cool.
When the potatoes are cool, quarter and slice them into 1/2-inch slices.
In a mixing bowl, add potatoes and the rest of the ingredients and toss well.
Chill and serve.
